Shikimic acid, an extract of Illicium verum L., is a white crystalline compound, which exists naturally in various plants. Shikimic acid has two kinds of functional groups in the same molecule, namely three hydroxyl groups and one carboxyl group, which have optical rotation. They can produce all kinds of esters and salts.
The most important characteristic of cycloalcohols is that they have chiral isomers and are the key intermediates for the biosynthesis of aromatic compounds. Shikimic acid is a key intermediate in the biochemical process from phosphoenolpyruvate to tyrosine.
