Casein is a binding protein containing calcium phosphorus, sensitive to acids and precipitated at low pH. Casein is the main protein in mammalian milk including cows, sheep and humans, α-casein is the main protein in mammals, human milk does not have α-casein, with β-casein as the main form of casein. Casein is both a source of amino acids and calcium and phosphorus for young children, and casein forms milk in the stomach for digestion.
